Executive Head Chef
Simon joined Gough Hotels in 1989 as sous chef at the Marlborough Hotel in Ipswich, where he quickly progressed to head chef and in 2000 became head chef at The Angel Hotel in Bury St. Edmunds. Simon now works as Executive head chef overseeing both The Angel Hotel and its sister hotel, the Salthouse Harbour Hotel, overlooking the marina in Ipswich.
“I believe in keeping food simple. I take the best local seasonal ingredients and develop my dishes from there, producing good, honest flavours.
My regular customers know my signature dishes, a favourite being: pan roasted scallops with cauliflower puree and pancetta”
Simon puts his success down to his established team, with many of his chefs having worked for Simon for years.
