  • For 4 fondants you will need:
  • 100g dark chocolate
  • 100g butter
  • 50g caster sugar
  • 2 eggs
  • 2 yolks
  • 20g plain flour

The Salthouse Chocolate fondant

This is a recipe I picked up a few years ago, and it’s one that is as reliable and robust as a recipe could be. It’s easy to put together and works well, and as long as you cook it correctly you can’t go wrong!


Melt the butter and chocolate in a metal bowl over some boiling water.

Mix the caster sugar and eggs together.

Fold in the chocolate and butter, then sift in the flour.

Allow the mix to set for 2 hours in the fridge, and use a mould that has been brushed with butter and flour.

Cook for around 8 minutes in a fan-assisted oven at 180°C.
